Tajine Cooking at its Finest
Have you ever cooked, or tasted food that's been cooked, in a tajine?
My mother is one hell of a cook. And she uses tajines and clay pots sometimes. They make the food taste, how do I explain this?, REAL! I have no other word to describe the taste.
The burning of clay adds this smokey, earthy (or heavenly for that matter) taste to the dish that I have never encounter with any other kind of pots. It's quite appetizing. I think the use of clay pots is one of Morocco's secrets for delicious, finger-licking food.
